ROASTED PEPPERS


-All on their own= Delicious.

-AS PIZZA, FOCCACCIA, SANDWICH BREAD, or POLENTA TOPPERS

-With MEAT & FISH (cooked in or on)

- IN SOUPS, CHILI, or VEGETABLE STOCKS

{use as a replacement for BELL PEPPERS in most recipes.  for 1 lb. of PEPPERS you can get away with 1/4 lb. roasted… though the more, the better!}

-AS A SAUCE
1. Thaw frozen roasted peppers overnight in refrigerator.

2. Heat an oil of your choice & add in:

  • 1 onion, diced

  • 1 BAG ROASTED TOMATOES

  • 4 garlic cloves, minced (or more if you like!)

3. Cook until golden & softened.

4. Add a quart or two of roasted PEPPERS.

5. Cook until flavors meld. Add:

  • 1 CUP CILANTRO

  • 2 TSP. CUMIN

6.  Immersion blend it all…. WALAA.  A DELICIOUS SAUCE
