ROASTED TOMATOES


-All on their own= Delicious.

-AS PIZZA, FOCCACIA, or POLENTA TOPPERS

- With MEAT & FISH

 -In SOUPS, CHILI, or VEGETABLE STOCKS

{use as a replacement for regular tomatoes in most recipes.  for 1 lb. of regular tomatoes you can get away with ½ lb. roasted… though the more, the better!}

- AS A SAUCE
1. Thaw quart or two of frozen roasted tomatoes overnight in refrigerator.

2. Heat an oil of your choice & add in:

1 onion, diced

4 carrots, diced

4 garlic cloves, minced (or more if you like!)

3. Cook until golden & softened.

4. Add roasted tomatoes.

 5. Cook until flavors meld. Add:

1 cup basil, fresh

5 sprigs of oregano

6.  Immersion blend it all…. WALAA.  A DELICIOUS SAUCE
